I’m sharing my recipe for super soft, chewy, and fluffy pumpkin sugar cookies just in time for Thanksgiving!
Hey, friends and Happy Thanksgiving week! Does anyone else get a little carried away at Costco? I mean, you can’t leave the store without spending at least $100. It’s like an unspoken rule. Last month, I saw that they had three packs of canned pumpkin puree. I was all like, “I totally need all this pumpkin to bake with!”. So, I got it. And up until today, I have had two whole (giant) cans of pumpkin sitting in the pantry.
To be honest, I haven’t had a lot of time to bake (again, #momlife) and I really couldn’t find any recipes I liked. I tried a pumpkin cookie recipe and it was a total fail. It was way too dense and cakey and I prefer soft, chewy cookies. Who’s with me?!
I had some time and I decided to create my own pumpkin cookie recipe. These are based on a sugar cookie recipe, so they are super soft with the texture of a sugar cookie but they taste kind of like pumpkin pie! They’re super light, fluffy, soft, and chewy aka the perfect cookie. They aren’t overly sweet so you can eat more than just a few without getting a sugar high. They are also pretty easy and quick to make. I think these would be the perfect dessert for Thanksgiving dinner. I plan to make another batch on Thursday morning and take them for our family dinner. Let’s be real though, I’ll probably eat half the batch before we get them there. At least my family will get a sample.
