Soft Pumpkin Sugar Cookies
These soft pumpkin sugar cookies are fluffy, light, and chewy! They are also very easy and quick to make using canned pumpkin puree. Enjoy!

  1. Preheat oven to 375 degrees F (190 degrees C). Prepare a large cookie sheet by lining with parchment paper or spraying with non-stick spray.
  2. In a medium bowl, stir together flour, baking soda, baking powder, and pumpkin pie spice. Set aside.
  3. In a large mixing bowl, cream together the butter and sugars until smooth using a stand mixer or hand mixer. Beat in egg, vanilla, and pumpkin puree. Gradually blend in the dry ingredients.
  4. Using a tablespoon or cookie scoop, drop tablespoon-size balls of dough onto prepared cookie sheet.
  5. Bake 8 to 9 minutes in the preheated oven. Let stand on cookie sheet for two minutes before removing to cool on a wire rack.
Recipe Notes

This recipe makes about two dozen cookies but using a 1-inch cookie scoop, it made a few extra (maybe 3-4 extra cookies).
